What is the BEAR RIVER KITCHEN INCUBATOR

Currently the kitchen is closed - It will reopen this Fall at the BATC Entrepreneur Campus 1000 West 1400 North

There is a new Law in Utah - The Cottage Food Production Rule, which allows people to make non-easily-perrishible food in their home. So you may not need a commercial kitchen - GO HERE for more State regulatory info. Rebecca Nielsen at Utah Department of Agriculture and Food administers the program, and is very helpful, and will send the applications. (801) 538-4956 Cell (801) 860-7075

Contact USU Food Safety for more Cache Valley Info and for recipe formulation - Dr. Brian A. Nummer , Extension Food Safety Specialist, 435-797-2116 They can also get you info on all the other contacts and permits you may need.

If you don't qualify for the Cottage Food Rule you will have to have us an inspected Kitchen (Bear River Health Department 435-792-6500 and Utah DAF 435-538-7149).

Otherwise EMAIL us or call Penny at (435) 753-8811 for other options.

The Bear River Kitchen Incubator is a public-use kitchen, run by the non-profit organization SAABRA. It was built to provide a space for people who want to prepare foods that can be sold to the public. State and federal laws require that food sold to the public be made in an inspected kitchen. The use of a household kitchen, usually will not meet the inspection criteria, and often those who want to sell prepared foods to the public have to build a separate kitchen for this purpose. In order to provide this type of facility and so someone wanting to start a small business can begin without having to bear the burden of building there own inspectible kitchen, this facility was conceived. People can produce small quantities of food here and work out their recipes, techniques, and marketing strategies, before expending large sums of money. This also allows the small business to work out the kinks and find out what they will actually need to go into production with less waste of their investment capital.

But people can also use the kitchen for personal use. Have you ever had to prepare a dinner for a large group of people and simply run out of counter, oven, or sink space? This BRKI is your answer. Those wishing to can their summer bounty will also find the BRKI facility beneficial.

Equipment and Facilities

We have two large convection ovens - perfect for baking and roasting quickly and evenly. A large professional Wolf Range with six burners is paired with two large stock-pot ranges, where large pots can be quickly heated to a boil. We have three mixers, a large 60 quart, a smaller 20 quart, and a household size professional model. Another piece of equipment we have available it a large commercial dough roller. It can make quick work of baked item preparation: croissants, biscuits, cookies, pie crusts, crackers, as well as many other items can be rolled out with this machine. To prepare foods quickly we have a professional 20 cup Cuisinart food processor. We also have a three-compartment refrigerator, and a two compartment professional freezer. Dry storage space and shelving is abundant - some of it with the ability to be secured with a lock. We also have numerous pots and pans, pressure cookers, knives and other kitchen hand tools, and a professional microwave.

We can provide help and advice with your food-related business as well. We have information and resources on food preparations regulations, business management, and developing business plans. We can also help with labeling, packaging, and food production operations. Our small office has a computer, color printer, FAX, laminator, and office supplies that can be used as well.

To use the kitchen

We require that anyone using the kitchen follow our policies, which include the safe-food handling procedures regulated by the Bear River Health Department and USDA. You will need a food handlers permit if you are preparing food to be sold to the public,. Then you will need to fill out a client form describing what you plan to prepare in the BRKI.
